I believe we are talking about Oracle Java 8 (101 and 102 - I tried both). Incidentally I have installed a fresh copy of Sierra on a separate partition and the issue occurs. I can get it to crash by changing the Java settings to always show the console, then use the java.com site to check the Java version. When the console pops up I hit shift and get the dialog that gets. So it looks like either there is a general issue, or it's specific Mac hardware.
